But how do you cook your roast potatoes😀I always don’t quite get them crispy enough and I assume that when you went through your potato phase at Uni, did it peak at the perfect roasted spud? Thank you Audrey! On Roast potatoes it's not too hard. I prefer smaller crispier potatoes to the traditional large fluffy but not crisp potatoes.
So the first thing for me was always cutting them a bit smaller than you would expect. Then when you par-boil them, you should mix 1/2 a teaspoon of baking soda into the water (before the potatoes).
Cook for 10mins, dump into in a colander and make sure to rough them up so there is a paste on the potatoes (not too much as they can fall apart) -and then you have to just commit to getting them crispy! Some oven (like at uni) take a ridiculously long time to actually crisp them up. But its worth it in my opinion!
